I made up this recipe yesterday because I am sick and wanted something warm and yummy waiting for me on the stove. This is what I had on hand and didn’t really think my throat could handle chunks of chicken.
Pour broth into a pan and start to warm it over medium heat. Chop and add vegetables to pot. Add in barley and seasonings. Now cook according to the barley directions. Mine called to be brought up to a boil, then to reduce heat, cover and simmer for 45-50 minutes.
Laddle into bowls and squeeze a slice of lemon into each bowl.
