This thick and hearty soup with warm Indian spices is a delicious comfort food and you would never know it but it’s also very healthy and easy to prepare! It’s a great way to use up leftover roast chicken or turkey too.
Heat oil in a large pot, add onion, garlic, carrot, celery and apple and cook on medium heat until soft (around 5 minutes).
Add flour and spices and mix until all vegetables are coated, then add in canned tomatoes and stir. Slowly add in the chicken broth, stirring constantly until soup is combined and thickened.
Add lemon juice, chicken and salt/pepper to taste and let soup simmer on low heat for 30 minutes.
Serve with bread (baguette or naan bread are both delicious with this soup).
Serves 4 as a starter or 2 as a main course.

kellydelp: I do drain most of the tomato juice out first but it might be really good with it added in as well! I have also thought about adding potatoes as but personally would never leave out the apple, I love the hint of sweetness!

Oops forgot – do you drain the tomato before you put it in? I didn’t, and it was delish but not as yellow as yours.

This is really great. Although I think I would sub potatoes for apples. (I subbed an extra carrot for celery also.) VERY very good. Thank you!!!
