Description

Harira is probably the most famous Moroccan soup. This recipe combines beef, chickpeas, plenty of tomatoes, a few herbs and of course spices!

Ingredients

  • 1 pound Beef, Cut Into Cubes
  • 1 cup Celery Finely Chopped
  • 1  Onion, finely chopped
  • ⅓ cups Parsley, Finely Chopped
  • ⅓ cups Cilantro, Finely Chopped
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Ground Ginger
  • ½ teaspoons Ground Cinnamon
  • Salt And Pepper, to taste
  • 8-½ cups Water, Divided
  • 2 cans (14 Oz. Size) Tomatoes, Pureed, With The Juice
  • 3 Tablespoons Tomato Paste
  • 1 cup Canned Chickpeas, Rinsed
  • ¼ cups All-purpose Flour
  • 1  Lemon, Juiced
  • 1 ounce, weight Vermicelli Or Angel Hair Noodles, Broken Into Pieces
  • FOR SERVING:
  • Lemon Wedges
  • Dates
  • Dried Figs

Preparation

In a large pot, add beef, celery, onion, parsley, cilantro, olive oil, ginger, cinnamon, and salt and pepper to taste. Add 6 cups water and bring to a boil. Reduce the heat, cover, and simmer for about 1 hour.

Add tomatoes, tomato paste, chickpeas, and 1½ cups water. Simmer for 30 minutes more, covered.

Meanwhile, in a saucepan, over low heat, add remaining 1 cup water and whisk in flour with lemon juice. Remove from heat, let cool for 10 minutes, and whisk once again.

Add flour mixture into the soup and stir well. Cook for about 10 minutes, stirring frequently. Add the noodles and cook for 5 minutes more.

Serve with lemon wedges, dates, and dried figs on the side.
