Description

Spicy and full of flavor! This won 1st place at our county fair this year. Yummm!

Ingredients

  • 1 can Refried Beans(16 0z Can)
  • 1 can Black Beans, Rinsed And Drained (15 Oz Can)
  • 2 cups Frozen Kernel Corn
  • 1 can Diced Tomatoes W/green Chiles (12 Oz Can)
  • 1 cup Diced Tomatoes
  • 1 can Chopped Green Chiles (4 Oz. Can)
  • 2 cups Chicken Broth
  • ½ cups Water
  • ¼ cups Salsa (pick The Heat You Like!)

Preparation

In a large saucepan, combine all ingredients. Bring to a simmer and simmer for 20-30 minutes until flavors have melded and heated through.

Serve with shredded cheddar cheese, chopped olives, and tortilla chips.

This was so good and super easy. I use it anytime I need a quick soup. I also use vegetable broth and added extra green chilies.

Delicious and easy!! Adding it to our repetoir of easy meals to put together. I used Veggie Broth instead of chicken, as Hubby is a vegetarian – and tasted great.
