Don’t let the name fool you—this is a hearty and healthy soup!
In a soup pot with a lid, add vegetable broth, onion, spinach, oregano, and black pepper. Stir gently. Cover and cook 8 minutes on medium heat.
Add chickpeas and lemon juice, stir again gently. Cover and reduce heat to low and cook 12 additional minutes, stirring gently during cooking time.
Serve in soup bowls piping hot and garnished with yogurt or sour cream. Enjoy!
