Description

Bacon gives this minestrone soup its great flavor.

Ingredients

  • ½ pounds Bacon
  • 1 whole Large Onion, Chopped
  • 1 cup Celery, Chopped
  • 2 cans (14.5 Oz. Can) Stewed Tomatoes
  • 2 cans (14 Oz. Can) Beef Broth
  • 2 cans (small Ones, 6 Oz. Each) Tomato Juice
  • 1 can (15 Oz. Can) Northern (white) Beans, Drained And Rinsed
  • 1 can (14.5 Oz. Can) Cut Grean Beans, Undrained
  • 3 whole Carrots, Cut Into Chunks
  • 2 cups Shredded Cabbage (not The Pre-cut Coleslaw Mix, It’s Too Stringy When Cooked)
  • 2 cups Water
  • ½ teaspoons Thyme
  • ¼ teaspoons Basil
  • ¼ teaspoons Oregano
  • 1 cup Macaroni (rotini Or Shells Work Well)
  • Parmesan Cheese, To Serve

Preparation

1. Cook bacon in a saute pan. Remove from pan, reserving bacon grease.
2. Saute the onion and celery in bacon grease until tender.
3. Add bacon, celery, and onion to soup pot. Add all the remaining ingredients except the pasta.
4. Bring to a boil, then reduce to a simmer. Simmer until vegetables are tender.
5. Add macaroni and cook until it is tender. Top each bowl with Parmesan cheese to serve.

I’ve been searching for a good minestrone soup recipe and this one is absolutely it! I made it last night and everyone (including my kids) totally loved it! It was easy to make and tasted so wonderful! Thanks for posting!

I made this last night. I used center cut bacon, so I needed a little olive oil to brown the onions and celery. Other than needing a little salt it was perfect. My kids loved it. I think I will also try to sneak in a little fresh spinach next time.

Thanks so much for posting this recipe, RealMom! It took me over a week to assemble the ingredients (I ended up feeding a pound of bacon that didn’t taste quite right to our dog and cats.). Once I got my act together the soup went together quickly and tasted great. I added about a clove of garlic, but followed your recipe pretty closely. It’s going into the regular rotation.

I made this for dinner last night, and it was WONDERFUL. I wimped out and used 4 slices of center cut bacon and it was still yummy. I froze half to take to a neighbor who’s going to be off his feet for a while.

This is my favorite soup recipe! I think I’ve made it 10 times. I’ve added zucchini or yellow squash if I have them. Also whole wheat pasta or orzo. A couple times I’ve used the precooked bacon and just added it at the end. Delicious!
