With plenty of lemon and rosemary, this healthy chicken soup is perfect for healing a cold, warming you up, or is just a perfect weeknight dinner!
Cook the chicken and shred or cut into cubes.
Get the chicken broth boiling and add in cubed potatoes. Cover and let boil for 10 minutes.
Meanwhile, dice the onion and saute in the oil for about 5 minutes. Mince the garlic and add. Wash and slice the kale into bite size pieces and add, sauteing for another 2 minutes.
Add lemon juice and rosemary to the chicken broth. Stir for a minute, then add the onion, garlic, and kale.
Finally, add the cooked and shredded chicken. Serve hot with some yummy bread!
