A simple soup recipe full of flavor.
Heat olive oil in heavy pan, cook onion until translucent.
Add carrots and garlic, cook for 1-2 minutes then add spices. Mix to combine and cook for 1 minute.
Add lentils, broth and water. Bring to a boil, reduce heat to low and simmer covered 1 1/2 hours or until lentils are tender. Using a potato masher, crush some of the lentils (optional). Garnish with fresh cilantro (optional).
