Brothy Italian style Wedding Soup. YUM!
Pour chicken stock and water into a soup pot and heat to boiling while you make the meatballs.
Combine ground beef, pork, eggs, bread crumbs, parmesan, and garlic in a mixing bowl. Once mixed, let rest for 30 seconds to allow the bread crumbs to absorb the egg. Then form the mixture into your preferred size meatballs.
Once chicken stock is boiling pour in the meatballs and gently stir. Cook for about 10 minutes. At the 10 minute mark, add spinach and pasta to pot and bring back up to a simmer, stirring occasionally but gently. Cook until pasta is done (according to package instructions).
Serve hot with some crusty bread.
