A hearty, filling soup that warms you up on a cold evening! Serve with crusty bread and butter.
1. Chop carrots, onion, and celery and sauté in butter until slightly tender and the onions are translucent. Add the turkey and brown with the vegetables. Add in the garlic during the last 2 or 3 minutes of sautéing.
2. In a large Dutch oven, add the chicken broth and salt, pepper, and Italian seasoning. Warm.
3. Add canned tomatoes, corn, and peas and simmer until tender.
4. Add the turkey and vegetable mixture.
5. Simmer for 30 minutes, adjusting seasoning as needed.
6. Add the tortellini during the last 5-10 minutes of cooking and simmer until tender.
7. Serve with warm crusty French bread.
