This soup is hearty and flavorful, but can be easily whipped up on a weeknight. Just be sure to make extra, it’s perfect for lunch the next day too.
In a large stock pot, brown the sausage. Drain the fat. Add the garlic and saute for 30 seconds. Add the tomatoes and broth and bring to boil. Reduce heat. Add remaining ingredients and cook approximately 10-15 minutes, until tortellini is tender.
Serve with grated Parmesan cheese.
