Preheat oven to 360ºF.
Put all the vegetables and thyme on a baking pan. Drizzle with olive oil and season with salt and pepper. Sprinkly balsamic glaze on tomatoes.
Roast in the oven for 30–35 minutes. Remove pan from oven and let vegetables cool slightly. Discard thyme.
Peel tomatoes and garlic. Blend tomatoes, garlic and onions along with their juices. Add vegetable broth until desired consistency is reached.
