A delicious, hearty potato soup. Add some crusty bread and it’s all you need for dinner on a cool evening!
Saute onion and carrot till onion is translucent. Add chicken stock and potatoes, simmer for about 45 minutes. Add the half-and-half and 1/2 cup of the milk; heat through.
Make a paste out of the remaining milk and the flour; add and stir till thickened. Add cheese, ham, 1/2 cup sour cream and heat through till cheese is melted. Salt and pepper to taste.
Serve with desired toppings: shredded cheddar, chopped bacon, the remaining sour cream, chopped scallions.

I can’t wait to try this. My husband is a farmer and this sounds like a good, hearty soup for men.
