Chock-full of healthy ingredients and it feeds a crowd! Perfect for chilly days.
Brown hamburger, onion, carrots and celery together until onion is soft.
Add tomatoes and break them up if you like. Personally, I like. Big, chunky, slimy tomatoes floating around in my beautiful soup? I think NOT.
Add beans and broth.
Simmer till carrots are soft, around 15 minutes.
Stir in basil and oregano and season with salt and pepper if desired, but go easy on the salt—canned broth has a lot in it.
About 15 minutes before eating, increase heat to almost boiling. Add tortellini and cook per package directions. I use Costco’s Olivier brand 5-cheese tortellini, sold fresh in the deli section. It’s amazing!

LOVED this soup! My first time to make a Minestrone soup, so I was delighted to find such a delicious recipe!! Thanks for posting. My husband and daughter loved it too! Definitely going on my list of favorite recipes.

Nice looking and original minestrone! I love the idea of using totellini instead of pasta. I’m looking forward to making this as soup weather is approaching fast.

Made this last night and it is AMAZING. A new favorite for our family. Very filling, and healthy too!
Definitely recommend.
Only thing I did different was added a couple extra carrots and celery because we love our veggies.
