Description

Warm and hearty chili perfect for cold and wet days!

Ingredients

  • 1 Tablespoon Oil
  • 1 whole Medium Onion, Chopped
  • 1 whole Green Bell Pepper, Chopped
  • 2 pounds Ground Chuck
  • 3 Tablespoons Chili Powder
  • 2 Tablespoons Cumin
  • ½ Tablespoons Ground Coriander
  • ½ Tablespoons Oregano
  • 1 Tablespoon Unsweetened Cocoa Powder
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Ground Ancho Or Chipotle Chili Powder
  • 1 pinch Cayenne
  • 2 cans 15 Oz. Stewed Tomatoes
  • 2 cans (15 Oz.) Kidney Beans
  • ½ cups Water Or Tomato Juice

Preparation

In a large heavy pot, heat oil over medium-high heat. Add onion to the pot and saute for 5 minutes until tender. Add pepper and saute for another 5 minutes.

Add beef to the pot and cook until browned. Drain the fat and return beef mixture to the pot.

Add the seasonings to the pot and stir for 30 seconds.

Add tomatoes and beans and water to the pot. Bring to a boil. Reduce heat and simmer for 20-30 minutes.

Serve with cheese and Fritos.

This will feed 4 or 5. If you are feeding 6-8, I would double the recipe. Better too much, than too little as my grandma used to say. And leftover chili is never a bad thing. :)

Does this comfortably feed four? or just barely? I would love to make it for a small group (about 6-8) and I was thinking of doubling it. But it also has 2lbs of meat which can sometimes itself feed 4. Thanks :)
