This soup is filling and healthy. It’s also so easy, you can make it on a weeknight.
Heat olive oil in a deep pot over medium heat then add onion, garlic and carrots. Sauté until golden brown. Add canned diced tomatoes, beef broth, tomato paste and potatoes. Bring to a boil then add zucchini, cabbage and turkey meatballs.
Simmer for about 15 minutes or until potatoes are cooked. Add fresh chopped cilantro and stir into soup.
Season with salt and pepper to taste.
