Description

Creamy sweet potato bisque spiked with hard cider!

Ingredients

  • 2 whole Medium Sweet Potatoes
  • 2 Tablespoons Unsalted Butter
  • 1 whole Apple, Peeled And Cored
  • 3 cloves Garlic, Minced
  • 1 whole Yellow Onion, Peeled And Quartered
  • 4 cups Chicken Or Vegetable Stock
  • 12 ounces, fluid Hard Cider
  • ½ teaspoons Cinnamon
  • 2 Tablespoons Maple Syrup
  • Salt And Pepper, to taste
  • 1 cup Cream

Preparation

Pierce each potato with a fork. Place potatoes on a baking sheet bake for about 45 minutes or until tender.

Meanwhile, in a large pot add butter, apples, garlic and onions over medium heat. Saute until apples break down and onions are translucent.

Add in chicken stock, hard cider, cinnamon and maple syrup. Simmer on medium/low heat until potatoes are finished baking.

When potatoes are cooked and have cooled enough to handle, slice open the top of the skins and scoop the sweet potato out with a spoon. Add potato into your pot.

With your immersion blender, blend until smooth. Season with salt and pepper to taste.

Mix cream in just before serving.

OMG . . . I am thrilled with the results of this recipe . . . if I had any disappoints it is because I didn’t make a full batch & I really wish I had now. I did tweak things slight – as I said I halved everything & based upon Jill’s review instead of using 2 cups of broth I used 1.5 . . . & because I had Woodchuck’s Fall edition I used 2 oz of that plus 4 oz of Woodchuck Amber. I also roasted my sweet potatoes the night before . . . so after simmering the sauteed onions/apples/garlic/butter mixture in the cider/broth for 20-25 mins I added all of that mixture to my vitamix & with the cold roasted sweet potato & blended away. The texture was soooo creamy that I started to eat it directly out of my vitamix without adding any creamer. In the end I decided that I should complete the dish & enjoy it to its fullest extent. I made myself a small bowl & stirred in a little light cream (it was all I had on hand)& topped it with a couple sweet cornbread croutons. OMG!! I am debating on making this again tonight because it was sooooo incredible. Thank goodness for Fall – I’m ready for soup / bisque season!!! Thanks for a fantastic recipe!!

You could taste all of the flavors in this bisque. The apple, cider, and sweet potato all came through really well. The soup didn’t turn out as thick as I was expecting. If I make it again I will probably use less broth so it will be thicker.
