A yummy chowder with a light, flaky fish.
Dice your red potatoes, shallot, and halibut.
Place the diced shallot into a large pot along with the olive oil. Saute until slightly tender (approximately 5 minutes).
Into the pot, add in the chicken broth, diced potatoes, dill, pepper, and salt. Bring to a boil and then simmer for around 20 minutes or until the potatoes are tender.
Add in the diced halibut and half-and-half. Cook for another 5 minutes or until the halibut is cooked through.
Serve and enjoy!
