Guinness creates a really rich and delicious broth for this chicken and vegetable soup!
1. In a large pot over medium heat, melt the butter then add the vegetables. Sweat them until soft, for about 10 minutes.
2. Add the chicken breast pieces and stir to combine and brown the chicken a bit, stirring to brown all sides.
3. Add the beer and scrape up any browned bits from the bottom of the pot.
4. Add the chicken stock and the fresh thyme and put a lid on the pot. Reduce heat to low and simmer for about 30 minutes. Season with kosher salt and black pepper and serve hot!
