I can pretty much guarantee that there will always be a few containers of this in my freezer from now on. It’s delicious, convenient and packed with good things!
In a large pot, add olive oil over medium heat. Stir in onions and cook until soft. Reduce heat.
Add split peas and boiling water with the bouillon cube to the pot. Bring to a boil, reduce heat and simmer for 20-25 minutes (until peas are cooked through but still slightly crunchy).
Ladle 1/4 to 1/2 of the soup into a large bowl and set aside. Using a blender, puree the remaining portion of the soup. Add in spinach and puree until smooth. Season with salt, if needed. Pour into the reserved soup and serve with a sprinkle of smoked paprika.
Freezes well.
