Description

American-Italian tomato saucy dish loaded with sweet peppers, zucchini and … hot dogs. This is a recipe handed down from my Italian immigrant family. My guess is the hot dogs were a replacement for a more expensive meat. It’s a touch spicy and great for cold nights.

Ingredients

  • 3 cans (28 Oz. Size) Crushed Tomatoes
  • 2 teaspoons Salt, Or As Needed
  • ½ teaspoons Black Pepper
  • ½ teaspoons Crushed Red Pepper *this Is Negotiable
  • 1-½ Tablespoon Sugar
  • 9 whole Sweet Peppers, Any Color, Cut Into Strips
  • 3 cups Sliced Zucchini
  • 1 pound Hot Dogs

Preparation

Start by preparing the sauce: Get your crushed tomatoes, salt, pepper and crushed red pepper cooking in a large pot on medium-low. Cook down for about 2 hours. Skim any orange acid foam from the top.

At 2 hours, add the sugar to dispel the acid taste of the tomatoes. Lower to simmer. Add your strips of peppers and slices of zucchini a bit at a time making sure there is enough room in the pot. Cover; simmer 2 hours longer.

At that point, add cut-up hot dogs. Simmer another hour.

Adjust seasonings at the end to make sure it’s salted and spicy to your liking.

Serve in shallow bowls with a nice Italian bread.

*This can all be rolled into a crockpot at the point you add the peppers, etc. Then at the last hour add the hot dogs.
