Description

Gazpacho WITHOUT added tomato juice. Just fresh veggies and herbs!

Ingredients

  • 1 whole Cucumber, Peeled And Chopped Into 1" Pieces
  • ½ whole Onion (red Or White)
  • 1 whole Hot Pepper (of Your Choice)
  • 4 whole Slightly Overripe Tomatoes
  • 3 cloves Garlic (depending On How Much You Like You Might Want More)
  • 3 dashes Tabasco To Taste
  • 1 pinch Salt And Pepper, to taste
  • 1 bunch Cilantro (a Handful, Really)

Preparation

Put half of the vegetables (not the cilantro, because it is an herb) in the blender and puree until smooth.

Then, add the second half of the veggies in an “pulse.” This will give you a chunkier gazpacho. If you want a smoother one, puree all the veggies.

Add Tabasco, salt and pepper to taste – this recipe might also benefit from a splash of red wine vinegar if you so choose. I didn’t, because I didn’t have any.

Roughly chop the cilantro and stir into the soup. Serve cold, garnished with a slice of cucumber and pepper. Alas, I forgot to take a picture before I ate it.

had some refreshing gazpacho that was very similar in the outer deserts of AZ last year. i love tomatoes, but this mixture was quite refreshing just when i needed it most, and on the house!

thanks for giving me a recipe to recreate a great memory!
