Description

This is a soup we’ve eaten for ages and is a total staple in our house (you will have most ingredients on hand). Every time we eat this, we mix it up, usually by accident. Easiest soup to make—ever.

Ingredients

  • 1 pound Ground Meat (Turkey, Sausage, Hamburger, Etc.)
  • Salt And Pepper, to taste
  • Chili Powder Or Taco Seasoning To Taste
  • 2 cans (14 Oz. Size) Diced Tomatoes Or Tomato Sauce
  • 2 cans (14 Oz. Size) Corn Or Some Frozen Sweet Corn
  • 1 can (14 Oz. Size) Kidney Beans
  • 3 cans (14 Oz. Size) Your Choice Of Black Beans, Navy, Garbanzo Beans, Etc.
  • 1 cup Shredded Cheese, To Serve
  • 1 bag (about 10 Oz. Size) Fritos Corn Chips, Scoops Or Regular, Or Whatever Chips You Have On Hand, To Serve
  • Sour Cream, To Serve (optional)

Preparation

Brown the meat then season with salt, pepper, chili powder (or taco seasoning) to taste.

While you are browning the meat, empty the canned foods (undrained) and corn into a large pot. Cook on medium heat until warm, usually 20 minutes. (Note: my husband does not like tomatoes so he usually purees the tomatoes to make a sauce before adding in the beans.)

After it’s done, drain fat from meat (our ground turkey never seems to have any) and stir into soup. Try to not overcook the meat.

Serve topped with cheese and chips. For a cool zip, you can also top with sour cream! There you go—so easy your kids can make this!

Lucky you Hazelbite- we’re from the Pacific Northwest and it actually SNOWED today! WA weather is weird this year… What is nice, though, about this recipe is that since it’s so quick to cook, it won’t heat your house up in the summertime!

Yum! Sounds good. Too bad it feels like Spring is here to stay or I’d be willing to give this a try asap. Into my queue for a rainy day.

This is my new go-to Frito recipe. It’s easy, quick, and so delicious. I love how chunky it is, and you could even use tortilla chips or tortillas to be different. Thanks for sharing this great recipe!

This was so, so simple to make! I used Chili Cheese Fritos in it and that seemed to be just a bit too much in it. Next time I’ll use regular Fritos instead! My husband loved it andI loved it as well. Home canned tomatoes gave it that lovely fresh taste that we so enjoyed!
