Rich broth with lots of onions topped with a creamy melted Gruyere! Yummy!
In a large saute pan, fry onions with the sugar in melted butter until caramelized, 10-12 minutes. Season with salt and pepper. Add to slow cooker along with water, beef bouillon, broth, brandy and thyme. Cover and cook on low for 8-10 hours or high for 4-5 hours.
Slice baguette into bite-sized pieces and place on a rimmed baking sheet. Drizzle with olive oil and salt and pepper to taste. Bake in a 325ºF oven for 15 mn. until crisp and golden. Cool and store in a ziploc bag.
Ladle soup into broiler proof bowls and top with croutons and cheese. Broil in the oven until the cheese is bubbly and golden. Serve and enjoy.
