This is a laughably easy recipe for Tortilla Soup. It can be made as spicy or mild as you want!
In large pot, heat 1 tablespoon oil over medium-high heat until hot. Add salsa and cook down to a paste (about 10 minutes). Add chicken broth, partially cover, and simmer over medium-low heat for about 45 minutes.
While this is cooking, fry the tortilla strips in oil, without crowding. The strips will stop sizzling when ready.
Garnish with fried tortillas, cheese, avocado, a lime wedge, or any other accoutrements (like leftover chicken!).
