Easy way to have a classic, comfort food favorite!
Melt butter in a large stock pan over medium heat. Add onions, garlic and thyme and cook for 20 minutes or until the onions and garlic are nice and caramelized. Dust the onions with flour and cook for another 5 minutes to thicken the onion mixture. Add the beef broth and simmer for approximately 10 minutes to incorporate the flavors.
Ladle soup into 8 individual ramekins that are on a foil-lined baking sheet. Place croutons directly on the soup and cover with a slice of cheese. Place under the broiler set to HIGH until cheese starts to get brown and bubbly. Remove and allow to cool slightly. Enjoy!
Note: If you are planning to take this dish to any type of party, dump the broth into a crock pot set to high. Sauté the onion mixure until done and add to the beef broth. Then just serve the soup with shredded cheese and croutons on the side so folks can make their own.
