Easiest potato soup ever.
Cook bacon until crisp. Set aside to drain and cool.
Mix all other ingredients, except cream cheese, in a crock pot. Crumble bacon, and mix in as well. Cook on low for 4 hours.
After 4 hours, cut up the cream cheese into small blocks, and add to the soup. Cook for an additional hour on low.
Top with shredded cheese and more bacon, if desired.
