Easy, delicious crockpot potato soup! Come home to a warm hearty meal the whole family will love!
Place the potatoes, chicken stock/broth, onion and garlic into your crockpot. Cook on high for 6 to 7 hours.
Remove about 1/3 of the soup and the garlic cloves and puree them in a blender. Add it back into the crockpot. Add cream cheese and cheddar cheese and stir until melted.
Add salt to taste and let it cook for 10 to 20 more minutes until the cheese is melted. Garnish with shredded cheese, chopped green onions, bacon and sour cream. Enjoy!
Note: When I make potato soup I like to half peel the potatoes, meaning I leave some of the skins on, and then cut them into about 1 inch squares.
