Description

I love lentil soup and I must not be alone in that love because when I used to buy canned soup I loved a particular brand lentil soup and it was always missing from the shelf. I cannot believe it took me so long to make this because it was so easy and so delicious. Even The Husband liked it and I never thought I would get him to eat a lentil!

Ingredients

  • 2 cups Dry Lentils
  • 16 ounces, fluid Canned Vegetable Or Beef Broth
  • 1 whole Beef Bouillon Cube
  • 3 cups Water
  • 1 whole Small Onion, Diced
  • 3 whole Carrots, Diced Into Large Pieces (3 Should Yield Approximately 1 1/2 Cups)
  • 2 stalks Celery, Diced Into Large Pieces (2 Should Yield Approximately 1 Cup)
  • 3 cloves Garlic, Minced
  • 1 whole Bay Leaf
  • ½ teaspoons Salt
  • ½ teaspoons Ground Corriander
  • ½ teaspoons Crushed Red Pepper
  • ½ teaspoons Black Pepper
  • ¼ Tablespoons Turmeric
  • ¼ teaspoons Cayenne Pepper

Preparation

Rinse the lentils thoroughly. Put all the ingredients into a crockpot, put the lid on, turn on low and cook for 5 to 6 hours. Makes approximately eight 1-cup servings.

It appears 1/2 teaspoons ground coriander is listed twice. Is anything missing? Or just repeated. I’m getting the ingredients today. Will let you know how it turns out.

This is a good solid recipe for lentil soup and fairly quick to prepare. I will make this again, but I will cut back by half both the cayenne red pepper and the crushed red pepper as it was a little too spicy for my husband and me.
