According to a friend of mine, this soup tastes “like autumn.” It’s a variation of the beef-veggie soup my mom used to make, only easier.
Easiest soup in the world. Dump the tomatoes, juice and all, in the crock pot. Add the onion, potatoes, water, seasonings, frozen veggies and cover. Cook on high for 5 hours.
Near the end of the cooking time, heat a saute pan with a bit of olive oil over medium high heat. Sprinkle salt in the pan. Cook the beef, letting it brown (don’t stir too much) in batches. Drain and add to the soup. Add the drained corn.
Taste for seasoning (sometimes the tomatoes are all the salt you need) and add salt as needed.

Great soup recipes ~ easy and delicious:) My husband loves this too. I served with warm rolls and it was super yummy. When cooking up the hamburger I sprinkled with steak seasoning and this added such great flavor.
This will be a great go to during the upcoming cold wintery months.
