A wonderfully rich, addictive, warm comfort soup.
Cut the sweet potato into 1 1/2 inch cubes. Dice onion.
Add the oil into a large soup pot and warm on medium heat. Add onions and saute until transparent, and then turn heat down to low and add the peanut butter, stirring until it melts in with the oil and onions. Add chicken stock and stir well. Add sweet potato and cook for approximately 20 minutes until the sweet potatoes are tender. Add salt and mix to combine. Pour mixture into a blender (or you can use an immersion blender if you have one) and puree, then return it to the pot and keep warm until ready to serve.
