Have a good old bowl of hot soup to keep you toasty and warm!
In a Dutch oven (or another pot with lid) add vegetable stock, light cream, black pepper and onion. On medium heat, stir and let it come up to near a boil. Then reduce heat to low and add mixed vegetables and parsley. Stir, place lid on and cook for 20 minutes. Stir a couple of times during cooking time.
Serve piping hot in individual bowls. Top with some grated Parmesan cheese. Enjoy!
