Only 7 ingredients (excluding salt and pepper) and 25 minutes to the best cauliflower soup you’ll ever eat.
1. Heat the olive oil in a large pot over medium heat. Add the onion and cook gently for 4-5 minutes until it starts to turn translucent. Add in the cauliflower, stock and garlic salt. Bring to the boil and simmer for 15 minutes.
2. After 15 minutes, take pot off the heat and whizz using a hand blender. Put pot back on the heat, add the cheese and cream and stir until he cheese has melted. Season with salt and pepper.
3. Serve with a sprinkling of cheese and black pepper and a few chives if you wish.
