Creamy vegetable soup with miniature alphabet noodles. Healthy and yummy! This is our favourite soup.
1. Roughly chop onion, celery, carrots and garlic.
2. Heat vegetable oil in a pot. Add chopped veggies, stir and cook for 3 to 4 minutes.
3. Add tomatoes (with juice), vegetable stock, Italian seasoning and salt. Simmer for 30 minutes.
4. Meanwhile, cook noodles, drain and set aside.
5. Puree the mixture in a blender. Return to the pot, add cream and heat as needed. I usually use 35% cream with a bit of milk, but you can use any cream or even milk.
6. To serve, spoon the pureed soup into a bowl. Then heap the noodles in a pile in the center of the bowl. Enjoy!
