Simple, easy, and wonderful.
Cook onion in butter in a large pan over medium-low heat until soft and transparent, but not browned. Wash and chop zucchini. Add to the onion along with chicken broth. Bring to a boil. Simmer for 15 minutes or until zucchini is tender. Add seasonings.
Puree mixture in blender until smooth. (I like to use a hand blender. Less mess!) Add cream; adjust seasonings to taste. Reheat but do not boil. Serve hot, garnished with grated cheddar cheese.
