Cream of bacon soup (with green onions) is like wearing that back-facing robe thing and watching True Blood episodes back-to-back all rainy afternoon. Perfection in a bowl.
While you are cooking your 8 pieces of tasty and hopefully applewood- or mesquite-smoked bacon, saute the onions and then the garlic in a saucepan. Drain the grease off the bacon and cut the pieces up; add them to the fragrant onions and garlic.
Pour in 32 oz. of chicken broth and let it simmer for about 10 minutes. Add the heavy cream.
Finally, melt the butter and add the flour into the butter to create the thickener. Add this to the soup. Meanwhile, cut up the deliciously crispy bread and warm it in the oven.
Let the soup cook on low heat for a little bit until you can’t stand it anymore, and then dig in. True Blood is waiting.

I love bacon, I mean…I really love it. Thanks for this recipe! I may have to buy a snuggie before I make this soup
