This recipe tastes quite a bit like Panera’s. It’s SO yummy and easy to make.
1. Cook bacon in pan, and keep the grease in the pan for the soup.
2. Bring broth to a boil then add potatoes, onion, and spices.
3. Boil on medium heat until potatoes are tender.
4. Smash a few of the potatoes for thickening.
5. Reduce to low heat. Add cream cheese. Heat, stirring until cheese melts.
Spoon into bowls and top with bacon, chives and cheese.
