This is real comfort food, not diet food! The flavors of the creamy sauce with the baked potatoes are married together so well that it’s hard to put down. I prefer to put the crumbled bacon and cheese on top of the soup because it adds another layer of flavor, but if you like yours combined, it may be done that way also.
Bake potatoes at 350 degrees for 65 to 75 minutes or until tender; cool completely. Peel and cube potatoes into 1″ cubes. You want it to be chunky, but some will break up.
In a large Dutch Oven, melt butter; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. If you want it thicker, mash a few potatoes against the side of the pot and stir it in; it will thicken right up.
Remove from heat; whisk in sour cream. Add potatoes and green onions. Place back on stove and heat to serving temperature over medium heat, stirring occasionally. Ladle into bowl and garnish with bacon and cheese, and get ready to say WOW!

I love this soup. We make it almost every week in the winter and at least once a month or more any other time.
It is a nice comfort food. This is very easy and taste like you spent all day fixing it. I also mix in the bacon and onions in the soup while it is cooking. Seems like it brings out the flavor more.

Turned out great! I did add the crumbled bacon and cheese to the soup before serving so that it all mixed together, rather than just using it as garnish for each bowl. And I agree, there’s never anything wrong with more bacon! Definitely hanging onto this recipe for future cold days……pairs perfectly with a buttered slice of freshly made bread!

This was the first time I ever made potato soup, I always thought it was hard and I was scared it wouldn’t turn out very good. I made this tonight and it is so good. We will be having it more often. They only thing I would change is I would add more bacon and mix it in with the green onions…or at least add some more salt. This is exactly what I was looking for!
