Fresh, tangy and healthy cold soup.
Broil the whole tomatillos, jalapenos, and onion until the tomatillos are soft, turning halfway to cook both sides. (This takes about 30 minutes in my toaster oven.) De-cap and de-seed the jalapenos. Store veggies in refrigerator until cool.
Place tomatillos, jalapenos, and onion in blender or food processor with the cilantro, lime juice and sea salt. Pulse until slightly chunky.
Gently stir in the diced avocado, pour into bowls, and serve cold.
