A recipe that’s sure to pull you out of the winter blues, this potato soup has the added bonus of easy prep and inexpensive ingredients.
In a Dutch oven or a large saucepan (at least a 4-qt. and preferably a 6-qt. for ample room), boil potatoes and onions until fork-tender. DO NOT DRAIN THE WATER. Cut the cream cheese into cubes and add to the pot; stir until the cheese melts. To this mixture, add creamy soups. Then add garlic, salt, pepper, and milk, to taste. Garnish with scallions, and serve at once!
Seriously, it’s that easy. You could saute some carrots, celery, or mushrooms and add them in. You could add a cup—or two—of cheddar to the crock, and it would just be lovely. And let’s not forget our dear friend: bacon. Enjoy!
