An easy vegetarian soup that could also just as easily have meat added to it. Don’t let the number of ingredients scare you off—it all comes together quick!
Saute the onion in enough oil to cover the bottom of a large pot. Add all the spices, veggies, and broth.
Mix in the coconut milk, lime juice and rice. Bring to a boil, then reduce heat and simmer covered for 25 minutes.
Add peanut butter and mix thoroughly before serving. Season with salt to taste.
