Seriously satisfying soup packed with green peas and onion.
Heat olive oil in a medium size pot. Sauté onion, shallot and garlic until fragrant, about 2 minutes. Add leek and celery and sauté until soft.
Add green peas, water, fresh thyme leaves and vegetable stock boil it and simmer for 10 minutes on medium heat. Turn off heat and let cool slightly before pouring the soup into a blender. Blend until completely smooth.
Adjust the seasoning and let it chill in the fridge for at least 1 hour before serving. When serving, drizzle in some coconut milk. Enjoy!
