A delicious chicken based soup with tortellini, spinach, and pieces of chicken. A hearty soup that can be served with bread and salad as a meal.
1. In a skillet heat the olive oil.
2. Cut the chicken tenders into 1/2-inch pieces and add to the skillet. Cook about 5 minutes, stirring occasionally, until you cannot see anymore pink on the outside of the chicken pieces. Remove from heat.
3. In a large stockpot melt the butter. Add the garlic and cook until browned and crunchy.
4. Add chicken broth and water to the stockpot and bring to a boil. Add the chicken and tortellini then reduce heat.
5. Simmer for 15 minutes on low heat. Slowly add the spinach and tomatoes (including the juice) and simmer for 10-15 more minutes.
6. Serve topped with pepper and Parmesan cheese.
