A light, filling soup that’s full of flavor. Loaded with chicken, vegetables, a zing of lemon and orzo pasta.
Add all of your ingredients into a crockpot (except the orzo pasta and spinach). Cook on low for 7-9 hours or on high for 5-6 hours.
About an hour before the cook time is done, remove the chicken from the pot and shred chicken with a fork. Add it back into the soup.
Meanwhile, cook your orzo pasta according to package directions.
About 5 minutes before you serve your soup, add spinach and orzo pasta. Put the lid on the crockpot and continue to cook. Wait for the spinach to wilt.
Top soup with a little Parmesan cheese when you serve it.
