This is such a easy autumn dinner idea and it tastes amazing on a chilly day! In this version I just used potatoes and onions as the veggies but you could also add sweet potatoes or use a combination of parsnips, broccoli and carrots.
Throw the onions, chicken, potatoes, salt and water into a crockpot. Turn on high and let cook for 1 hour.
Remove the chicken breasts, let cool 10 minutes and shred the chicken. Return the chicken to the crockpot and add the thyme. Allow to simmer on low for 1-2 hours.
Mix together the sour cream, mustard and whole wheat flour. Mix into the crockpot. Turn off the crockpot and let the flavors mix for 20 minutes before serving.
