Description

True Minnesota comfort food. This is the recipe I use most often when bringing a meal to a friend in-need. Perfect with salad and bread sticks.

Ingredients

  • 2 cups Cooked Wild Rice (allow 45 Minutes)
  • 2 cups Cubed Cooked Chicken (or Rotisserie Chicken)
  • 6 Tablespoons Butter
  • 1 Tablespoon Minced Onion
  • ½ cups Flour
  • 2-½ cups Chicken Broth
  • 1 teaspoon Salt, Or To Taste
  • ½ cups Shredded Carrots
  • 3 Tablespoons Chopped Slivered Almonds
  • 12 ounces, fluid Evaporated Skimmed Milk
  • 1 bunch Snipped Fresh Parsley

Preparation

Cook wild rice per package directions. Allow for approximately 45 minutes.

At the same time you can easily bake 2 chicken breasts at 350 for 45 minutes in a covered shallow pan of water. Or just use a rotisserie chicken.

In a large stockpot, melt butter and sauté onion. Blend in flour and cook for 2 minutes; gradually stir in broth and add salt.

Cook over medium heat, stirring constantly, until mixture comes to a boil; boil and stir one minute.

Stir in wild rice, chicken, carrots & almonds, simmer about 5 minutes.

Blend in evaporated milk; heat to serving temp. Garnish with parsley

I usually double or triple this recipe and freeze it in containers for later. Nothing beats the meaty texture of wild rice and waiting the 45 minutes for it to cook is well worth it.

Thought this was pretty good but a bit bland. I added some baby portabellos.Needed a kick in the pot.

Buy a rice pilaf mix from Lipton, makes this recipe even easier! You can just dump it in!

My daughter and I love this recipe. She just asked me to make another pot of it. I only added some minced garlic and mushrooms. It’s a good recipe base to add what you like to it. This soup reminds me of my childhood because I grew up in Minnesota!
