A warm and comforting soup that is herby and soothing. Perfect for a cold winter day.
In a large stock pot over medium heat, sauté onion in a couple of tablespoons olive oil until translucent. Add garlic, salt, cumin, chili powder, and oregano and sauté for a couple of minutes until garlic is soft and spices are fragrant. Add stock and remaining ingredients and bring to a boil. Cover and lower heat and let simmer for a couple of hours. Stir occasionally.
Serve with shredded cheddar, sour cream, cilantro and tortilla chips.
