Broccoli. Cream. Cheese. Soup. Sriracha. Gotta try it.
Heat the olive oil in a skillet over medium heat and add the onion. Sauté about 5 minutes before adding the garlic. Continue to sauté until onion is very fragrant and translucent, about an additional 5 to 7 minutes.
While the onion and garlic are sautéing, fill a large pot with about 1” of water and bring to a boil with a steamer basket inside. Place broccoli on top of the steamer and steam about 5 to 6 minutes or until slightly soft when poked with a fork. If you do not have a steamer, simply put the broccoli directly in the water and strain it when finished.
Once broccoli is steamed, use tongs to place it into a blender or food processor. Add the rest of the ingredients (including onion mixture) and blend until smooth.
Transfer the soup to a large saucepan and simmer for 15 to 20 minutes, allowing the soup to get hot and flavors to cook together.
Serve with additional grated cheese and sriracha on top.
