Description

Yummy soup, perfect for fall and winter. The best thing is that the recipe calls for common ingredients that are probably already in your pantry and fridge!

Ingredients

  • 1 pound Ground Beef
  • ¾ cups Chopped Onion
  • ¾ cups Shredded Carrots
  • ¾ cups Diced Celery
  • 1 teaspoon Basil
  • 1 teaspoon Dried Parsley
  • 4 Tablespoons Margarine, Divided
  • 3 cups Chicken Broth
  • 4 cups Peeled, Diced Potatoes
  • ¼ cups Flour
  • 8 ounces, weight Cheddar Cheese, Cubed
  • 1-½ cup Milk
  • ¾ teaspoons Salt
  • ½ teaspoons Pepper
  • ¼ cups Sour Cream

Preparation

Brown ground beef. Drain and set aside. In a 3-quart saucepan, sauté onions, carrots, celery, basil, and parsley flakes in 1 tablespoon margarine until vegetables are tender or about 10 minutes. Add chicken broth, potatoes, and beef. Bring mixture to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender.

While the above is simmering, melt the remaining 3 tablespoons margarine in a small skillet; add flour. Cook while stirring 3-5 minutes until bubbly. Add to soup and bring soup mixture to a boil and cook, while stirring, for 2 minutes. Reduce heat to low. Add cheese, milk, salt, and pepper. Cook while stirring until cheese melts.

Remove from heat and blend in sour cream.

This is FAR better second-day reheated. All the flavors really meld together. I can’t wait to try it with variations on the cheese (horseradish cheddar, perhaps?)

Two thumbs up! Made this tonight and it was a big hit at our house. I used half & half (instead of milk) because I had some leftover in the fridge that needed to be used. It was great! Thanks for sharing!

Easy for a week night. All of my meat & tater guys loved it. Great Taste.

Tweaks I made. Had no chicken stock on hand, so I used water with a beef bouillon cube. Left the sour cream out and used it as a garnish on individual bowls along with a TBL of dill pickle relish. Truly tasted like a cheeseburger…very impressed. Thanks for sharing!
