A hearty soup that satisfies the whole family on cold winter nights.
In a large soup pot, cook potatoes and carrots in chicken broth until tender. Brown ground beef in a separate skillet and add to the cooked vegetables.
Melt butter in a skillet and saute onions until tender, about 3 to 5 minutes. Whisk in flour and milk to make the cheese sauce base. Turn heat to low and add cubed Velveeta cheese until melted. You may have to add more milk if it gets too thick.
Add melted cheese and onion mixture to the beef and vegetables in chicken broth. Add seasonings and bring to a simmer.

Very good soup! I made a few changes: I had to use beef broth instead of chicken, had to use sharp cheddar as I was out of Velveeta, and also I added bacon. thanks for a great recipe!

This sounds great, but I can’t stand Velveeta. Any other cheeses you’d recommend?
